How to Prevent Mini Muffins From Sticking

Mini muffins stick because the cavity has a high surface-to-volume ratio and thin walls that grip. Why minis stick more

A mini cavity has proportionally much more wall and floor touching the batter than a standard cavity, and the batter that rises onto the flat top forms a fragile collar. High-sugar and fruit-heavy batters caramelise against the metal. All of this is worse if the pan prep missed the cavity corners.
