Light vs Dark Baking Pans: What the Colour Changes
A dark or dull-finish pan absorbs more oven radiation, so crusts and especially bottoms brown faster and deeper. A light, shiny pan reflects more and bakes gentler. With a dark pan, many bakers lower the oven about 25°F and check earlier. For quick-baking mini muffins, a light pan is usually the safer default.
The mechanism
Ovens heat by convection (moving air) and radiation (from the walls and elements). Dark, matte surfaces absorb radiant heat more efficiently than light, shiny ones, and they re-radiate it into whatever is touching the pan. So a dark pan runs hotter at the food surface than a light pan in the same oven, particularly on the bottom.
