Converting from a standard recipe

  1. Keep the temperature the same for the first test batch.
  2. Start checking at roughly half the original time.
  3. Note the actual finish time and adjust the rest of the batch.
  4. If bottoms are too dark by the time the centres set, drop the oven 15–25°F next time or move the rack up one position.

Doneness cues at mini size

  • A toothpick in the centre comes out with a few moist crumbs, not wet batter.
  • The tops spring back when pressed lightly.
  • The edges have just started to pull from the cavity walls.

Why bottoms over-brown

A mini muffin sits in a small, shallow cavity with a lot of pan contact relative to its volume. In a hot oven the pan floor transfers heat fast, so the bottom can colour heavily in the short bake window — especially in dark metal or nonstick pans. Options: lower the temperature, use a lighter pan (see light vs dark baking pans), or double up baking sheets under the pan.

Batch baking

If you are baking several pans, rotate them front-to-back halfway and, if using two racks, swap top and bottom. Let a metal pan cool between batches or the next batch starts baking on contact and the bottoms set unevenly.
