Standard vs Specialty Muffin Pans

The default "muffin pan" is a 12-cup with cavities about 2.75 in across. Specialty variants change the size or shape: 6-cup for small batches, jumbo/Texas for oversized muffins, muffin-top pans for flat all-crust rounds, popover pans for tall narrow cavities, and mini pans for bite-sized. They are not interchangeable without adjusting batter and time.

The standard pan

A standard 12-cup muffin pan has cavities roughly 2.75 in (70 mm) across and 1.5 in (38 mm) deep, about 1/2 cup to the brim. Almost every muffin and cupcake recipe is written for this size unless it says otherwise.

Substituting between sizes

  • Up a size (standard → jumbo): fill two-thirds, add roughly 5–10 minutes, watch the centre.
  • Shape changes (muffin-top, popover) usually need a recipe written for them — the batter behaviour differs, not just the timing.
